This is my second post on eggless cupcake recipes without butter and condensed milk. Last week I went to my friend’s house to teach baking in her new oven.I found this recipe in that oven manual.I clicked few cake recipes from that manual in my mobile.This morning I tried no egg, no butter banana walnut muffin for the first time following that recipe and I was completely satisfied with the result.It was so soft and spongy. Don’t worry if u have over ripe bananas in hand.Just make this muffin and all the bananas will vanish in no time. .My daughter Raksha had two muffins happily. Its a great way to make our kids consume walnuts without any complaints.Even though i have used maida here,i am happy that the addition of bananas and walnuts make this muffin a healthy choice for kids.I am planning to bake the same using whole wheat flour and will try to update the results here.I have bookmarked few recipes for this cake recipe using microwave too.Soon i will come up with that version.Its a great tea time cake & a healthy breakfast recipe if taken with a glass of milk.So lets see how to make this yummy,spongy banana nut muffin using easily available ingredients in our pantry !!

Eggless banana walnut muffin recipe
Eggless banana walnut muffin recipe – yummy teatime cupcake recipe !

Total time: 30 Minutes
1 cup = 200 ml
- Maida/All purpose flour – 3/4 cup
- Sugar – 1/3 cup + 1 tbsp ( use 1/2 cup for more sweetness)
- Ripe banana – 3 nos (I used yelakki variety,use 2 if long ones)
- Sunflower oil/Odourless Cooking oil – 1/4 cup
- Vanilla essence – 1/2 tsp
- Baking powder – 1/2 tsp
- Cooking soda/Baking soda – 1/2 tsp
- Quick cooking oats -1 tbsp
- Boiled Milk – 1 tbsp ( at room temp)
- Walnuts – a handful ( chopped)

METHOD
- Take the banana and mash it well in a bowl.Add vanilla essence,oil and sugar.Mix well.
- In another bowl,sieve the maida,baking powder & soda.Add oats to it and mix well.
- Make a dent in the center.Add the mashed banana mixture and half of the chopped walnuts to it.Fold it gently in one direction.Do not beat the mixture.U will find the batter very thick after mixing.Add a tbsp of milk to it and mix gently.The consistency of batter will be thick and spoonable.Don’t panic.
- Preheat the oven in convection mode at 180c for 10 minutes.In the mean time,spoon the batter till 3/4 th of cupcake/muffin liners and stud the walnuts on top.
- Bake them in 180c for 20 minutes.Mine got done exactly in 20 minutes.Keep an eye after 15 minutes.Check it with a tooth pick or back of a spoon for doneness.

Note
- For variations,u can replace maida with wheat flour.
- Oats can be skipped.
- Use ripe banana for best taste.
- Adjust the quantity of sugar based on the sweetness u need because the taste of cake may vary based on the sweetness of banana.

Hi Chitra, yummy muffins colour looks as if u have added coco powder and small correction u have not mentioned oil in the ingredients list.Hope it has been missed.
Hi Swati,I have not used cocoa powder in this.Its the color of ripen banana mix and walnuts after baking 🙂

Made these changes
1.replaced maida with atta
2.sugar with nattu sarkarai
3.oil with butter
4.coarsely powdered walnuts
As iam giving to my 2 and half yrs kid made these changes…but the cake was perfect
